A sweet porridge with wheat, dried fruit and nuts, Ashure is traditionally prepared in Greece on the eve of Saint Varvara’s Day.

Ingredients
Servings: 8-10
500g husked wheat, left to soak in water overnight
4 tbsp raisins
4 tbsp honey
1 tsp cinnamon powder
zest of ½ orange
2 tbsp corn flour, diluted in ½ glass of water
3 tbsp walnuts, in thick chunks
1 tbsp sesame seeds roasted in a nonstick pan for 2-3 minutes, without any fat
Preparation
Add 3lt water in a pot and boil over high heat. Strain the what and pour it in the pot. While it’s boiling, scoop out the foam for about 5 minutes.
Bring the heat to medium and boil for approximately 30 minutes. Add the raisins, honey, cinnamon and orange zest, lowering the heat.
Boil over low heat for another 10 minutes, or till the wheat softens. Add the corn flour and stir carefully for 3-5 more minutes, till it thickens and gets the texture of a watery porridge.
Take it off the heat and serve in a deep bowl. Sprinkle over the walnuts and sesame seeds, then let it cool.
