Traditional Politikos (from Istanbul) turkey, walnut and paprika snack

Whip up this delicious snack from leftover turkey, chicken or pork, so nothing goes to waste.

Ingredients

Servings: a cup of leftovers

1 cup turkey or chicken or pork (skinless and fatless), diced
½ cup chicken broth (if we have some stored in the fridge) or carrot juice (homemade or store-bought, preferably bio)
1 slice crustless bread, soaked in water and strained
½ garlic clove, minced
100g walnut kernels (replace with almonds if you’re using pork leftovers)
a pinch of cumin powder
a pinch of paprika
salt
freshly ground pepper
1 tbsp olive oil 

Preparation

In a blender, mix the bread with the broth or juice, garlic, nuts and spices. 

Pour the mix over the meat cubes and stir, then serve. 

Pour the olive oil and sprinkle a pinch of paprika, adding a few more walnuts or almonds, according to taste. 

To fully enjoy this snack, wrap the meat cubes in pita bread that you’ve oiled and warmed up, either in the oven or in the toaster.
