A unique spin on pizza, combining creamy tsalafouti (PDO) with spinach and walnuts. You can always make your own dough from scratch, or use a store-bought one for convenience.

Ingredients

1 pack of store-bought fluffy pizza dough (400g)
3 tbsp olive oil
1kg fresh spinach
4 fresh spring onions, thinly chopped
½ bunch chervil
½ bunch kafkalithra (Mediterranean hartwort)
½ bunch dill
salt
pepper
250g tsalafouti cheese
100g walnuts, broken into thick chunks
Preparation
Wash and prepare all the vegetables, then let them dry.
Sautée your spinach, spring onions, kafkalithra, chervil and part of the dill in olive oil, then add salt and pepper. Make sure the spinach (as well as the rest of the vegetable) is baked but not to the point of wilting, just enough so that the juices are released.
Preheat the oven at 200ºC (180ºC in a fan-forced oven).
Transfer all the vegetables into a strainer and press till all the juices are released.
Roll the dough open on a baking sheet-covered pan.
Spread 180g tsalafouti on the dough, then place all the vegetables on top.
Place the pan in the oven and bake for 15-25 minutes.
After taking your pizza out of the oven, spread the rest of the cheese on top, then sprinkle the dill and walnuts.
