Ingredients

Servings: 8

3 bunches rocket
1 cup walnut kernels
zest and juice of a small orange
orange slices of an orange (peel off the pith as much as possible)
8 tbsp olive oil
salt
pepper

Preparation

In a bowl, mix the olive oil with the orange juice, zest, salt and pepper. 

Thoroughly wash the rocket and let it dry. 

Place the rocket in a big bowl and pour the sauce over. 

Stir, then transfer into a salad bowl or a platter. 

Sprinkle the walnuts and orange slices over the salad, then serve.
