Ingredients
2 cups walnuts
2 slices stale bread
1 garlic clove
5-6 tbsp olive oil
salt
1 ripe avocado, sliced and sprinkled with lemon so it doesn’t blacken
500g fusilli
2 tbsp chopped onion for serving
olive oil and freshly ground pepper for serving
Preparation
Dip the bread slices in water and squeeze out the excess. Crush them into breadcrumbs in a blender.
Add the walnuts, garlic and olive oil and stir. Add a bit of water from the boiling pasta, so that the sauce thickens. Replace olive oil with tahini, according to taste.
By this point, the pasta should be done in salted water. Dry them, then serve. Pour the sauce over and finish with the sliced avocado and walnuts.
