Mushroom salad with raw white mushrooms and oil, lemon and mustard sauce

Ingredients

Servings: 6

For the salad

500g white mushrooms, wiped with a damp towel and thinly sliced
2 tbsp pine nuts (roasted in a nonstick pan for 2 minutes, without any fat)
80g walnuts kernels, crushed in a blender

For the marinade-lemon and oil sauce:

1 tbsp mustard
2 tbsp lemon juice
70 ml olive oil
1 tsp thyme honey
1 tsp oregano, dried and ground
salt
freshly ground pepper

Preparation

Beginning with the marinade, add all the ingredients into the blender and mix till smooth. 

Place the mushrooms on a platter and arrange them evenly. 

Pour the marinade over and let the mushrooms rest for about 20 minutes, till they soak in the flavor. 

Spread the pine nuts and kernels evenly, then serve.
